Hello again, and welcome to a new week of food! It’s the last week of September, and where I am we are finally having a full Autumnal week! It will be in the 70s outside all week, and hopefully for the long haul.

With that said…it’s time for another soup/stew – this time a lovely curry!

This one is an old favorite of mine that I come back to a few times per year. For myself, I make one modification – instead of coconut milk, I use almond milk with a splash of coconut extract. That is because coconut is exceptionally high in saturated fat, so I’d rather avoid it. This change does nothing to change the flavor, maybe just makes the texture a bit less creamy.
