Hello everyone! I’m back from vacation and have a brand new meal plan for you!

For next week’s bath prep meal, I’m in the mood for soup. I’ll be making a vegetable curry – a little light on the red curry paste, because I’ve learned that the full amount in a recipe is always way too spicy for me! I’ll cut that in half, and also replace the coconut milk with almond milk and a splash of coconut extract, because coconut milk has too much saturated fat.
