Hello again! I took last week off from meal planning, mostly because I was burned out on planning meals! But I’m back this week, with something I haven’t made in a while, and with something a little new.

I want to make a yummy veggie lasagna, but this time I want to try making the noodles myself! I have a pasta machine to roll out dough, but I’ve never used it. And a local market has semolina flour, so I’m ready to give it a try! It might be a little trial and error, but you’re welcome to come along for the ride.

I don’t have a recipe for the lasagna, since I throw it together without a recipe. But I will include below the recipes for the lasagna noodles, if you’re interested in making them yourself, and for a cashew cheese sauce (I don’t have a recipe for this either, I just toss stuff in a blender).
