Hello, and welcome back! I’m sorry I missed you last week…I was on staycation from work, and strayed from my usual routine. But I’m back now, and have the latest meal plan ready for you!

This week I’m doing a more traditional summer meal – burgers with all the summer sides. Along with the black bean burgers, I will be making zucchini, green beans, sliced cucumbers, corn and tomatoes. I’m also planning some simple pita pizzas for the side.

For the pizzas I have no recipe. I simply top a pita pocket with marinara, cashew cheese and whatever toppings I want, then add it to the air fryer for 3-4 minutes.
