Hello again, friends! It’s another week of meal planning, and this week I have a garden full of lettuce to use up because it’s just starting to bolt. Those spring veggies are coming to a close, including the peas which I’ve had to start pulling as they die off. So…I chose a Greek salad for the week!
This is actually a recipe I pulled from my Spring & Summer Recipe board on Pinterest from long before I was plant based, so I will share it below and include substitutions: I’m swapping out the chicken for chickpeas, and removing the feta. Everything else stays the same (I also eliminate oil in my dressings)!
