Welcome back! It’s time again to share the meal plan for next week. I’ve decided to keep my oven off and go for a soup and fritter this time: Potato & Leek Soup, with Chickpea Fritters. I think this combo will be lovely! And I will serve the fritters on a bed of greens for a well-rounded meal.

Chickpea Fritters Note: this recipe calls for parmesan cheese, which I simply swap out with nutritional yeast. I also skip the oil in all recipes, either air frying instead of pan/deep frying, or subbing in vegetable broth or applesauce for oil in recipes
