Hello again, friends!
I have completed my weekly meal plan and am sharing here with you all. Please keep in mind that this is a plan for me as a solo plant based person in my home, so I only plan one main meal, or occasionally two, per week. I also have one meal that I plan for my son as well. I have two teen sons, but one is 19 and rarely eats at home anymore – he’s at that age and will learn quickly how unaffordable eating out is as soon as he moves out on his own!
Moving on! I found on Pinterest a recipe from This Savory Vegan for Roasted Cauliflower Tortilla Soup, which will allow me to use up some leftover ingredients from this week’s black bean enchiladas. So I will be making that for myself, and will link the recipe here:
Roasted Cauliflower Tortilla Soup
For Logan, he likes coconut shrimp so I occasionally will buy some that I make in the air fryer for him. I will also slice up some potatoes into fries and make those in the air fryer, and will roast some zucchini and summer squash in the oven to go with it.
