Hello again, friends!
If you’re thinking you already saw a meal plan for April, week 1 – you would be correct! I am trying to correspond these blog posts with my vlog schedule over on YouTube, where I share my meal plans and film cooking the following week. But…when I schedule those videos, these blog posts are not yet out and therefore I can’t link them in the video description. So…I need to start putting them out earlier to line them up with my vlog schedule!
Coming up next week for me, I am planning a burrito bowl of sorts with roasted sweet potatoes and black beans. The recipe is this one from She Likes Food. Of course something like this you don’t even necessarily need a recipe, as it’s something you can just throw together from whatever you have in the fridge – burrito bowls are a fun little build-your-own experiment!
I won’t bore you with lots of unnecessary text, as the plan above is pretty self-explanatory. I’ve made it downloadable so you can save it if you’d like a copy. If you’d like to see me preparing this recipe, I will be filming it on Monday and it will be live on my YouTube channel the following Sunday, April 7th.
