Hello friends, and welcome to the bonus meal planning post for this week! At the end of the week ahead is the Spring holiday we all love – Easter! I have put together a little meal plan for that as well, and will share it with you below.
This one incorporates both plant based and non-plant based recipes, attempting to stay as healthy as possible. My stepdad suffered a heart attack in January and has gone plant based, but still occasionally will have a bit of meat if we go out or for a special occasion. I wanted to work something in that would be as heart healthy as possible, but also still work for the non-plant based folks.
I chose chicken and dumplings because everyone loves them, and it still avoids red meat, like the traditional hams and pork roasts that dominate at Easter. I am also skipping the deviled eggs, since there will already be eggs in the dumplings and eggs are high in cholesterol. The dumplings will have chicken and eggs, but I will also use vegetable broth and Country Crock plant butter to keep them as close to plant based as it can possibly get.
All of the sides will be 100% plant based, as will the appetizers and dessert. So we can rest assured that everything else on the menu will be heart-healthy!

If you are preparing an Easter meal for a fully plant based family, it should be simple enough to find a plant based main that can stand in for the Chicken and Dumplings.
