On last week’s vlog, I made a shepherds pie that I whipped up without a recipe. I went ahead and put together a recipe card to share with you here!

That should be downloadable for you if you’d like to save it. It was a quick and simple dish to make! I cooked down my lentils first, then boiled and mashed the potatoes.

Saute onions in a bit of broth, then add lentils, frozen mixed vegetables, tomato paste, balsamic vinegar and seasonings, and cook through.

Pour mixture into a baking dish, top with mashed potatoes, and bake at 400 for about 20 minutes, or until potatoes begin to brown at the peaks.

Let cool, and enjoy!
