I made this creamy polenta with red wine mushrooms from @rabbitandwolves and it was SOOOO delish! As for the parsley I sprinkled on top to make the photo pretty - 0% recommend! Not a good flavor with this dish 😆 Happy Cinco de Mayo! Coffee + Sunshine. It’s a beautiful and chilly self care Sunday! Made a batch of this Black Bean Salsa on Sunday to snack on this week. Delicious with some organic blue corn tortillas, or on a salad with a little extra drizzle of red wine vinegar. Is there anything better than a hearty soup on a chilly December day? Not vegan or plant-based, but it’s my birthday and this cake is beautiful! It’s okay to indulge from time-to-time. Life is meant to be celebrated! Thank you to @spanishstreetfarmacy for the perfect blueberry lavender birthday cake! This Southwestern Stuffed Sweet Potato is one of my favorite #plantbasedlunch options. All I do is combine some black beans and corn with salsa and a bit of cumin, heat through, and ladle into a cooked sweet potato. Top with cilantro and enjoy! Welcome to my garden!
