Spicy Veggie Pad Thai

I’ve been doing lots of recipe tests in the kitchen lately, and have a fresh new dish to bring you. This Pad Thai was so amazing that even the teenagers liked it…veggies and all! Let me know if you try it…enjoy!

There is no mashing, blending, mixing or shaping patties. Just marinate some mushroom cape, then pop into the air fryer or on the grill. Easy peasy! After a few weekends of hard work, muddy boots and cold fingers - I have a greenhouse! The greenhouse is finished and I’m SO thrilled to have it just in time for seedling season! I even hung a strand of solar powered string lights inside, set to light up for six hours once it’s dark. The greenhouse is up, now it’s time to prep the soil for tomato plants, and prep the front for landscaping! Spring has come early this year, with days staying consistently in the 50s and 60s. That means time to plant the cool season vegetables: lettuces, radishes, beets and peas. In another week or two the carrots will go out too! There’s nothing quite like a tangy bean salad with cumin and cilantro! I always have to serve mine on a bed of greens with a splash of white wine vinegar.
